Smokey BBQ SauceAnne BBQ

This a great sauce that is always well liked at my BBQ's- Makes half about pint , I always make double or more the quantity and freeze the sauce for another sunny barbeque day.

25g or large knob of butter

1 onion peeled & finely chopped

1 clove garlic crushed or use garlic pure

30 ml red wine vinegar

150 ml water

30ml English Mustard

30g Demerara Sugar

1 Thick Slice of Lemon

1 Bay LeafRubber Duck

Pinch Cayanne Pepper

30ml Worcester Sauce

100ml Tomato Ketchup ( value range is fine )

30ml Tomato pure

Salt & Pepper

Melt the butter in a saucepan, fry the onion until soft but not brown.

Add vinegar , water mustard , sugar, lemon, bayleaf and cayenne.

Bring slowly to the boil & simmer for 15 mins , stir in the remaining ingredients simmer for a further 5 mins

Remove the lemon and bay leaf before serving.

Best served warm , put a small pot on the corner of the BBQ
